Meet Miss Elizabeth Chu

Tell us about your educational background & your teaching/work experience.

I graduated at The University of Nebraska Lincoln with a B.S. in Education and Human Sciences and a M.S. in Child Youth and Family Studies. Along with my master’s degree, I received my teaching certification. Fun fact! I am also certified as a nursing assistant under the state of Nebraska.

I have also had work experience at Family Services of Lincoln. Here, I helped with after school programs. I would set up lessons and oversee the students if the main teacher wasn’t there.

Since 2018, every Saturday, I have been involved with my youth group at Immaculate Heart of Mary Parish in Lincoln, NE. I have a Level II Youth Group Leader. I also teach CCD at this parish. I have taught 6th grade, TA for 5th grade, and 7th grade. Currently, I am continuing this call in my journey of faith.

What do you love about your job?
Witnessing the academic and spiritual growth of the students!

Who is your favorite Saint or what is your favorite scripture?
Favorite Saint is St. Catherine of Siena “Be who God meant you to be and you will set the world ablaze.”

Tell us about your family (spouse, children, grandchildren, pets, etc.):
My dad is a Vietnam Veteran and the US government granted access to America back in 1991. He was a prisoner of war for 7 or 9 years, I forgot. My whole family including my mom and 8 of us moved to America by plane in 1991. They had me in 1992. It was hard coming to a country where you don’t know the language or the customs, but we were blessed enough to have Catholic Social Services and the Vietnamese community in Lincoln (which was growing at the time) help us along the way. Aside from the struggles growing up, my faith has been the constant throughout my life.

When you were a kid, what did you want to be when you grew up?
To be honest I wanted to be everything growing up! Teacher, doctor, food stylist, chef, librarian, ballet dancer, fashion designer.

What is your favorite sweet treat?
This is hard because of my allergies to milk and eggs so I would have to say FRUIT!

Do you have any hidden talents or hobbies?
Sewing, reading, folding origami, cooking/baking, bouldering, and wish I could travel more!

What’s your favorite thing to do on the weekends?
Going to youth group and Mass, oh and if it’s in season the farmer’s market!

What piece of advice would you give parents to help their child(ren) succeed at St. Stephen?

I would challenge each student to learn something new about everyone here at St. Stephen. God made all of us unique and special. I would also like to invite all parents to pray with their child to truly appreciate everyone for who they are. Cultural curiosity is also valuable to a successful experience in school and a way to love our brothers and sisters in Christ.

Being the only person in my family to be born in America, I had some difficulties/experiences accepting my cultural background due to the lack of cultural awareness in my social environments. Growing up searching for cultural identity lead me to finding my identity in Christ. I truly believe that if we pray for our children to accept each other for who God made us to be then that will help the children succeed at St. Stephen.
